Ingredients

  • 2 lbs tomatoes plum or roma type, cored and chopped (about 10 medium)
  • 1 medium onion finely chopped
  • 2 medium jalapeños seeded and minced
  • 2 cloves garlic minced
  • ¼ cup fresh cilantro finely chopped
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ cup lime juice

Instructions

  • Combine all ingredients in a stock pot and bring to a boil.
  • Reduce heat and simmer for 5 minutes.
  • Ladle the salsa into prepared jars, leaving ½ inch headspace.
  • Process jars in a water bath canner for 15 minutes for half pints and pints, adjusting for altitude.
