- 2 lbs tomatoes plum or roma type, cored and chopped (about 10 medium)
- 1 medium onion finely chopped
- 2 medium jalapeños seeded and minced
- 2 cloves garlic minced
- ¼ cup fresh cilantro finely chopped
- 1 tsp salt
- ½ tsp black pepper
- ½ cup lime juice
Combine all ingredients in a stock pot and bring to a boil.
Reduce heat and simmer for 5 minutes.
Ladle the salsa into prepared jars, leaving ½ inch headspace.
Process jars in a water bath canner for 15 minutes for half pints and pints, adjusting for altitude.
